Organic Protein Cookies Recipe

Let’s whip up a recipe for delicious organic protein cookies that are not only nutritious but also incredibly satisfying. They’re perfect for a post-workout snack, a healthy treat with your coffee, or just to keep those hunger pangs at bay in the most organic way possible. Here we go!

Organic Protein Cookies Recipe

Ingredients:

  • 1 cup organic oat flour (you can make this by grinding organic rolled oats in a food processor)
  • 1/2 cup organic protein powder (choose your favorite flavor, but vanilla or chocolate tends to work best)
  • 1/4 cup organic almond butter (make sure it’s well-stirred if it’s from a new jar)
  • 1/4 cup organic coconut oil, melted
  • 1/4 cup organic maple syrup or honey (for a vegan option, stick with maple syrup)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt (optional, but it brings out the flavors)
  • 1/2 cup organic dark chocolate chips (ensure they are at least 70% cacao for added antioxidants)
  • 1-2 tablespoons organic almond milk (only if needed to help the dough come together)
  • One teaspoon of vanilla extract

Instructions:

  1. Preheat the Oven & Prepare the Baking Sheet: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the oat flour, protein powder, baking soda, and salt. Stir until well mixed.
  3. Combine Wet Ingredients: In a separate bowl, mix the almond butter, melted coconut oil, maple syrup (or honey), and vanilla extract until smooth. If the almond butter is too thick, gently warm it to soften it.
  4. Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients bowl. Stir until you get a thick, sticky dough. If the dough is too crumbly, add a tablespoon of almond milk until it comes together.
  5. Add Chocolate Chips: Fold in the dark chocolate chips evenly.
  6. Shape the Cookies: Form the dough into small balls and place it on the prepared baking sheet using a spoon or your hands. Gently flatten each ball with the back of a spoon or your palm. These cookies don’t spread much, so shape them to your desired thickness and size.
  7. Bake: In the oven for 8-10 minutes or until the edges turn golden brown. They will still be soft but will firm up as they cool.
  8. Cool Down: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
  9. Enjoy: Serve your organic protein cookies with a glass of almond milk, or pack them as a healthy snack for on-the-go.

Tips:

  • Feel free to add nuts, seeds, or dried fruits to the dough for extra texture and flavor.
  • You can substitute almond butter with organic peanut butter or sunflower seed butter if you’re allergic to almonds.
  • For a more intense chocolate flavor, you can use cocoa powder in place of part of the protein powder. Adjust the sweetener accordingly.
