Mini Omelet Bites

Ingredients:
– 6 large eggs
– 1/4 cup milk (or dairy-free alternative)
– 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)
– 1/4 cup diced bell peppers (any color)
– 1/4 cup diced onions
– 1/4 cup diced tomatoes
– 1/4 cup chopped spinach
– 1/4 cup cooked and crumbled bacon or sausage (optional)
– Salt and pepper to taste
– Cooking spray or oil for greasing

Instructions:

1. Preheat the Oven:
Preheat your oven to 375°F (190°C). Lightly grease a muffin tin with cooking spray or oil.

2. Prepare the Veggies and Meat:
Dice the bell peppers, onions, and tomatoes. Chop the spinach and cook, crumbling the bacon or sausage if using.

3. Mix the Eggs:
Whisk together the eggs and milk in a medium bowl until well combined. Season with salt and pepper to taste.

4. Add Fillings:
Divide the diced veggies, meat (if using), and cheese evenly among the muffin cups. Mix and match the fillings to create different flavors in each omelet bite.

5. Pour the Egg Mixture:
Carefully pour the egg mixture over the fillings in each muffin cup, filling each about 3/4 full. The eggs will puff up a bit while baking.

6. Bake:
Place the muffin tin in the oven and bake for 15-20 minutes until the omelet bites are set and slightly golden on top. You can test doneness by inserting a toothpick into the center of a bite; if it comes out clean, they’re done.

7. Cool and Serve:
Allow the omelet bites to cool in the muffin tin for a few minutes before removing them. If needed, use a butter knife to gently loosen the edges. Serve warm.

Tips:
– Customization: Feel free to customize the fillings based on your preferences or what you have on hand. Other great additions include mushrooms, ham, broccoli, or jalapeños.
– Storage: Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave for a quick breakfast or snack.
– Make-Ahead: These omelet bites are perfect for meal prep. Make a batch at the beginning of the week for easy, grab-and-go breakfasts.

Enjoy your mini omelet bites!
