1. Preheat the Oven:
Preheat your oven to 375°F (190°C). Lightly grease a muffin tin with cooking spray or oil.

2. Prepare the Veggies and Meat:
Dice the bell peppers, onions, and tomatoes. Chop the spinach and cook, crumbling the bacon or sausage if using.

3. Mix the Eggs:
Whisk together the eggs and milk in a medium bowl until well combined. Season with salt and pepper to taste.

4. Add Fillings:
