Quinoa Brownies Ingredients:

1 cup cooked quinoa, cooled

1/2 cup unsweetened cocoa powder

1/4 cup almond flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup coconut oil, melted

2/3 cup honey or maple syrup (adjust to taste)

Two eggs

1 teaspoon vanilla extract

1/2 cup chocolate chips (optional) Instructions: Preparation: Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper. Mix Dry Ingredients: Combine the cocoa powder, almond flour, baking powder, and salt in a mixing bowl.

Stir until well combined. Combine Wet Ingredients: Whisk together the melted coconut oil and honey/maple syrup in another bowl until smooth. Add the eggs and vanilla extract to the wet mixture. Mix well. Combine

Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until everything is well combined. Fold in the cooked quinoa. If using chocolate chips, add them in and gently mix. Bake: Pour the batter into the prepared baking pan and spread it evenly.

Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs.

Cool and Serve: Allow the brownies to cool in the pan for 10-15 minutes. Lift the brownies out of the pan using the parchment paper and let them cool completely on a wire rack before cutting them into squares. Enjoy these nutritious quinoa brownies as a delightful treat or snack!

Feel free to adjust the sweetness by varying the honey/maple syrup amount to suit your taste preferences. If desired, you can also add chopped nuts or dried fruits for extra texture and flavor.
