Here’s a recipe for grilled chicken fajitas:

Ingredients:

– 1 1/2 pounds boneless, skinless chicken breasts

– 3 bell peppers (any combination of red, green, and yellow), sliced

– 1 large onion, sliced

– 3 tablespoons olive oil

– 1 lime, juiced

– 2 cloves garlic, minced

– 1 teaspoon chili powder

– 1 teaspoon ground cumin

– 1/2 teaspoon smoked paprika

– 1/2 teaspoon garlic powder

– Salt and pepper, to taste

– 8 small flour tortillas

– Optional toppings: sour cream, guacamole, salsa, shredded cheese, chopped cilantro

Instructions:

Marinate the Chicken:

  1. In a large bowl, combine olive oil, lime juice, minced garlic, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
  2. Add chicken breasts and coat them well with the marinade.
  3. Cover and refrigerate for at least 30 minutes or up to 4 hours.

Preheat the Grill: Preheat your grill to medium-high heat (around 400-450°F or 200-230°C).

Grill the Chicken:

  1. Remove the chicken from the marinade and discard the marinade.
  2. Grill the chicken breasts for 6-7 minutes per side or until the internal temperature reaches 165°F (74°C).
  3. Remove from the grill and let rest for a few minutes before slicing.

Grill the Vegetables: Grill the sliced bell peppers and onions while the chicken is resting. Toss them in a bowl with olive oil, salt, and pepper, then grill in a basket or on a sheet of aluminum foil until they are slightly charred and tender, about 8-10 minutes.

Warm the Tortilla. While the vegetables are grilling, warm them on the grill for about 30 seconds per side until they are soft and pliable.

Assemble the Fajitas:

  1. Slice the grilled chicken into thin strips.
  2. Fill each Tortilla with chicken, grilled peppers, and onions.
  3. Add any desired toppings, such as sour cream, guacamole, salsa, shredded cheese, or chopped cilantro.

Serve the grilled chicken fajitas immediately, with extra lime wedges on the side for squeezing over the top. Enjoy!
