Always on the go? Plan ahead with these protein bars. Raw Peanut Butter Protein Bars

Ingredients:

2 cups rolled oats
2 tbsp raw honey
1-cup peanut butter
¼ cup coconut oil
¼ cup dry cranberries
¼ cup chia seeds
¼ cup flax seeds
¼ cup chopped pecans
1 tsp sea salt

Directions:

  • Spread a dab of coconut oil around in an 8X8 pan and set aside
  • In the bowl of a food processor, combine oats, peanut butter, and honey. Pulse until well combined, the mixture should look like chunky sand
  • Pour mixture into a medium sized bowl, and then add in the remaining ingredients. With a rubber spatula, stir all ingredients until well incorporated
  • Pour mixture into the pan and press down evenly, using your fingers. Once the dough is spread evenly, place in the refrigerator for 30 minutes
  • After 30 minutes, cut evenly into squares. Store in airtight container in refrigerator
